Have a simple screen lock with a slide bar to unlock. If I lock the iPhone screen normally I have to then unlock. Put in password. Open trainerize etc to enter data between sets.
I've used another app (pumpnlog) that has its own simple screen lock, so you only have to slide unlock it to enter the data, then toggle screen lock again.
